Introduction

Traditional recipe for fenugreek seeds sweet ladoos
Ingredients:
•1/2 cup fenugreek seeds
•1 cup whole wheat flour
•1 cup jaggery (grated)
•1/2 cup ghee (clarified butter)
•1/4 cup grated coconut (fresh or desiccated)
•1/4 cup sesame seeds
•1/4 cup chopped nuts (almonds, cashews, and pistachios)
•1 tsp cardamom powder
•1/2 cup milk
•A pinch of salt
Instructions:
1.Soak Fenugreek Seeds:
1.Soak the fenugreek seeds in water overnight or for at least 8 hours. This helps reduce their bitterness and makes them easier to grind.
2.Grind Fenugreek Seeds:
1.Drain the soaked fenugreek seeds and grind them to a coarse paste using a little water if necessary.
3.Roast Wheat Flour:
1.In a heavy-bottomed pan, heat 2 tablespoons of ghee. Add the whole wheat flour and roast on low heat until it turns golden brown and gives off a nutty aroma. This might take about 10-15 minutes. Keep stirring to prevent burning. Set aside.
4.Roast Fenugreek Paste:
1.In the same pan, add 2 more tablespoons of ghee and add the ground fenugreek paste. Roast on low heat until the paste becomes dry and starts to turn slightly brown. This helps in reducing its bitterness. Set aside.
5.Roast Sesame Seeds and Nuts:
1.In a separate pan, dry roast the sesame seeds until they pop. Set aside.
2.In the same pan, dry roast the chopped nuts until they are golden brown. Set aside.
6.Combine Ingredients:
1.In the heavy-bottomed pan, add the roasted fenugreek paste, roasted wheat flour, sesame seeds, grated coconut, and roasted nuts. Mix well.
7.Melt Jaggery:
1.In a small saucepan, add the grated jaggery and a little water. Heat it gently until the jaggery melts and forms a syrup. Filter to remove impurities if needed.
8.Mix Jaggery Syrup:
1.Pour the hot jaggery syrup into the mixture of dry ingredients. Add cardamom powder and a pinch of salt. Mix well.
9.Add Milk and Form Laddus:
1.Add milk gradually to the mixture while mixing. The mixture should be moist enough to form balls but not too wet.
2.Grease your hands with a little ghee and shape the mixture into small laddus (balls). If the mixture is too dry, add a little more milk.
10.Cool and Store:
1.Allow the laddus to cool completely. Store them in an airtight container.
